Red Velvet Cake Batter Ice Cream Cake

Prepare to attempt to eat your computer screens…

I present to you… Red Velvet Cake Batter Ice Cream Cake!

I don’t think I need to even say anything about this.  TO. DIE. FOR.  Literally.  Recipe below:

Cake Batter Ice Cream:

1 cup milk

2 cups heavy cream

2/3 cup yellow boxed cake mix

3/4 cup sugar

1 tsp vanilla extract

Place ingredients in ice cream maker.  Once done, put in springform pan if you have one (makes removal easier – you could also use a regular cake pan)

Red Velvet Cake:

Red velvet boxed cake mix (that’s right – easy way out)

You can of course use your own fancy pancy from scratch red velvet cake mix if you so choose.

 

To assemble, just wait til the cake layers have cooled and the ice cream layer is fully frozen.  Then carefully place the ice cream layer on top of one layer of cake.  I did this by placing the springform pan upside down and then removing the side.  Place other layer of cake on top, and frost with a whipped cream frosting (or whatever you’d like).  Decorate with sprinkles, and enjoy!
